Pulp from carrot juice can add moisture and a healthy helping of vegetables to desserts.

Moist carrot cake made of nutritious carrots. It is healthy snack for children. Crunchy carrots will add flavor to the cake.


INGREDIENTS

  • 5 eggs
  • 250g carrot pulp
  • 140g of sugar
  • 160g ground almonds
  • 100g cornstarch
  • 2 tbsp lemon juice
  • 1 tsp baking powder
  • A pinch of cinnamon
  • A pinch of salt

METHOD

  1. Beat the egg yolks with the sugar until it becomes very clear then add the lemon juice. Keep beating.
  2. Add the carrot pulp, almonds, cinnamon, salt, cornstarch and baking powder, mix well.
  3. Whip the egg whites until stiff then gently fold them into the first mixture.
  4. Put the mixture obtained in a greased mold, bake at 180° for 50 minutes.
